Method
- In a large bowl, cream together the butter, brown sugar, and honey until smooth.
- Add the egg and mix until fully incorporated.
- In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, and salt.
- Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
- Wrap the dough and refrigerate for at least 30 minutes.
- Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
- Roll the chilled dough to 4–5 mm thickness and cut out gingerbread men.
- Bake for 8–10 minutes until edges are set but centers remain slightly soft.
- Cool completely on a wire rack before decorating or serving.
