Ingredients
  

  • 370 g all-purpose flour
  • 1 tsp baking soda
  • 1 tbsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • 125 g unsalted butter softened
  • 100 g brown sugar
  • 3 tbsp honey
  • 1 large egg room temperature

Method
 

  1. In a large bowl, cream together the butter, brown sugar, and honey until smooth.
  2. Add the egg and mix until fully incorporated.
  3. In a separate bowl, whisk together the flour, baking soda, ginger, cinnamon, and salt.
  4. Gradually mix the dry ingredients into the wet ingredients until a soft dough forms.
  5. Wrap the dough and refrigerate for at least 30 minutes.
  6. Preheat the oven to 180°C (350°F) and line a baking tray with parchment paper.
  7. Roll the chilled dough to 4–5 mm thickness and cut out gingerbread men.
  8. Bake for 8–10 minutes until edges are set but centers remain slightly soft.
  9. Cool completely on a wire rack before decorating or serving.
